What is cupping?

Within the coffee industry, cupping is perhaps one of the most important skills anyone can develop. Initially developed by green coffee buyers, cupping provides a consistent methodology for evaluating a coffee's quality before accepting it for market. In simple terms, cupping is tasting, however in much the same way that a wine connoisseur would evaluate fine wine, cuppers use a strict set of tasting protocols to assess quality. There is always subjectivity in one’s taste, however a certified cupper is trained to detect the subtle nuances in coffees.  The table below is from the Specialty Coffee Association’s SCAA Cupping Protocol,  which is the most commonly used method within the specialty coffee industry.
